From the Editor
Chill leftover aquafaba (liquid from canned chickpeas), covered, up to 1 week and use as a plant-based egg white replacement in meringues, marshmallows, mousses, and mayonnaise. Or use purchased aquafaba powder and follow package directions. We love Vör and Saheli brands. Find them both at Whole Foods or on Amazon.
