Berdasarkan Tabel 4 menunjukkan bahwa tingkat kesukaan panelis terhadap aroma cookies cenderung menurun seiring dengan penambahan tepung komposit yang diberikan. Semakin banyak penambahan tepung komposit menyebabkan nilai organoleptik aroma semakin menurun. Hal ini dikarenakan bau khas dari tepung komposit sehingga panelis kurang begitu suka.
