Place eggs, sugar, salt, and lilikoi juice in a medium saucepan. Do not put it over the heat yet. Whisk the ingredients together until smooth. Place over low heat. Stir constantly with a wooden spoon until the mixture thickens, about 10 minutes. Add the butter. Stir until smooth. Remove from heat, strain, and pour into jars1.Place a heat-proof bowl over a pot of boiling water set to medium high heat, being careful not to let the bowl touch the water, to create a double boiler. Add eggs and sugar. Stir to combine. Then pour in lilikoi juice and continue to stir. Once well combined add butter. Pour in to sterilized jars and place lid2.Melt butter over medium heat. Mix eggs, sugar and juice in a bowl. While stirring constantly, slowly add mix to melted butter and bring to a full rolling boil over medium heat3.Lay your fish filets out on a large cookie sheet covered with aluminum foil. Salt and pepper each fillet. If you like things spicy lightly sprinkle on the red pepper. Using a pastry brush, brush on the Lilikoi Coconut Butter onto each fillet. Cover with chopped macadamia nuts. Bake in the oven for 15 minutes or until done4.Mix all ingredients together, and bake for 1 hour at 375°F in 10-by-14-inch pan. Let cool slightly. While still warm, glaze with a mixture of 2 tablespoons of lilikoi purée and 2 cups of powdered sugar. Cut with a plastic knife (it won’t stick to the mochi). Serve warm with vanilla ice cream and slices of assorted fresh fruit5.
